Fruit 'n' Trail Mix
¼ cup sunflower seeds
4 cups old fashioned oats
½ cup vegetable oil
¾ cup cashew halves (I used raw peanuts, cheaper)
2/3 cup slivered almonds, toasted
½ cup sesame seeds, toasted
½ cups packed brown sugar
½ cup honey
1/teaspoon ground cinnamon
1 ¼ cups assorted bite-size dried fruit (raisins, apricots, cherries,
(cranberries, dates, etc.)
In a large skillet, lightly toast oats in oil. Add the sunflower seeds,
cashews (raw peanuts), almonds and sesame seeds. Combine the brown
sugar, honey and cinnamon; add to oat and nut mixture. Cook and stir
for 5 minutes.
Spread in two ungreased 15" x 10" x 1" baking pans. Bake at
350 for 15
- 20 minutes. Cool, stirring often so it doesn't stick to pan. Stir
in
fried fruit. Store in an airtight container. Yields: 10 cups
